Chocolate Oats

Chocolate Oats

(Makes 2 Servings)




This is one of my most favorite breakfasts, anytime of the year! Protein-packed, full of fiber and low in fat, oats are designed to boost your energy levels and help you lead a healthy lifestyle! They are filling, satisfying and are very versatile! With so many wonderful health benefits is it any wonder oats are one of my favorite ways to start my and my family's day?  


Ingredients:

1c old fashioned gluten free oats
1c plant milk
1c water
2-3 Tbsp unsweetened cocoa powder
1 scoop Chocolate Protein Powder ( I use Dutch Chocolate Complete from Juice Plus+)
2 Tbsp pure maple syrup
1/4 tsp sea salt
1/2 tsp cinnamon
1/2 tsp pure vanilla

 Combine all ingredients in a saucepan. Cook over medium heat until thick and creamy, stirring frequently to prevent the oats from sticking to the bottom of the pan, around 6-8 minutes. Remove from heat and spoon into two bowls. Top with fresh fruit, a drizzle of PB2 (*see note below) or some non-dairy chocolate chunks. Enjoy!

*You can use natural peanut butter, but I opt for PB2 for a lower fat and less calorie option. I just combine 2 Tbsp of PB2 powder in a small bowl and then add about 1 - 1 1/2 Tbsps water. Stir with a spoon until it is combined and creamy.  It needs to be thinner than peanut butter consistency but not too thin. Drizzle with the spoon over the top of fresh fruit and oats!
