Overnight Oats

 Overnight Oats

(Serves 3)


This recipe makes breakfast a breeze!  It only takes 10 minutes to make and then it's ready to go for a quick and healthy breakfast on a busy morning! I love this for weekday mornings where my kids can go to the fridge and help themselves to a jar and enjoy! And it's just as quick as pouring a bowl of cereal but lower in sugar, higher in fiber, and much more filling! And if you're kiddos don't like cold oats, then it warms nicely in the microwave so it's great for those cool, crisp, fall mornings! 

Ingredients:

2 1/4 c rolled oats
2 1/4 c unsweetened almond milk
3 tsp chia seeds
6 Tbsp maple syrup (can use liquid Stevia) 
1 scoop Vanilla Complete by Juice Plus+

Combine all ingredients in a bowl.  Spoon into 3 individual jars. Add in your favorite mix-ins (I have a few ideas listed below), pop on a lid, and leave in the refrigerator overnight (and up to 3 days). 

Double Chocolate Banana Oats:
Stir in 1 Tbsp unsweetened cocoa powder to base recipe in a jar.  Add 1 Tbsp non-dairy mini chocolate chips or cacoa nibs, and 1 mashed banana on top. Chill. Top with a sprinkle of more mini chocolate chips before serving. Enjoy.

Blueberry Lemon Oats:

Stir 1/3 c fresh or frozen blueberries into base recipe in a jar. Chill. Before serving top with fresh blueberries and 1/2 tsp fresh lemon zest. Enjoy.

Apple Pie Oats:

Stir 1/2 tsp cinnamon into base recipe in a jar.  Add in 1/2 a diced apple. Chill. Sprinkle a small dusting of cinnamon onto apples before serving. Enjoy!
