Oat Bake
(Makes a 8x8 pan)
This is a delicious prep ahead or make on a slower morning breakfast! Another great way to incorporate oats and all the benefits of them in a tasty way! This recipe is versatile, meaning you can change up the flavor by adding different types of fruit! The recipe below is for a "banana bread" oat bake, but you could add strawberries, cherries, blueberries, peaches, raspberries, really just about any fruit will work!
Ingredients:
Dry Ingredients:
1 1/2 c rolled oats
1/2 c brown sugar
1 tsp Baking Powder
1 tsp Cinnamon
1/2 tsp Baking Soda
Wet Ingredients:
2-3 ripe bananas
1 Tbsp Pure Vanilla Extract
2/3 c Plant milk
(Add fruit-optional)
Mix dry ingredients together in a large bowl. Combine wet ingredients together in a separate bowl and mix well. Next, combine the dry and wet ingredients together and again mix until well combined. Pour into an 8x8 parchment lined oven safe pan. Sprinkle some non-dairy chocolate chips over the top if desired. Bake in a 350 degree oven for 30-35 minutes. Let cool slightly and enjoy! Place any remaining bake in an air tight container and store in the fridge for up to 4-5 days. Can be reheated if desired to serve.
Note: If adding frozen fruit you may want to add in a little more oatmeal to help absorb some of the water and juice that will be released from the fruit in baking.
